    This week on Basics, we're tackling one of the home-cook holy-grails: really chewy, really crisp, really good bagels, somehow existing outside NYC. Or Montreal.

    1 cup plus 2 tablespoons ice water (9 ounces)
    2 tablespoons malt syrup
    2 ⅔ cups (14 2/3 ounces) bread flour
    4 teaspoons vital wheat gluten
    2 teaspoons instant or rapid-rise yeast
    2 teaspoons salt
    ¼ cup (1 1/4 ounces) cornmeal
    ¼ cup (1 3/4 ounces) sugar
    1 tablespoon baking soda

      Exactly my problem.I can't get any here in Germany and need to make my own!! Messed up the recipe the first time somehow, no rise from the yeast!

      @Esme Wayne Boston makes such shit bagels. We just moved here from NY and it's no comparison. Boston basically just makes bread in the shape of a bagel.

    The recipe used here is 61% hydration, not the 50 to 55% typical of bagel dough. I used 55% hydration and the dough is just too dry to work on a dry board. Difficult to make balls, rolling up the dough doesn't stick to itself and joining the ends is impossible without wetting both ends and squeezing. During the proof, the joined ends separate to make nice u-shaped bagels. I have had moderate success by wetting the board prior to shaping to entice the dough to stick.

    Since I don't get to go to the states regularly anymore, I really miss Bagels here in Germany. Your recipe look really promising, so I tried it. Got all the right meassuring tools, so I don't mess up. Watched the video a few times and then I tried it.
    For some reason, the dough looked fine when I worked with it and put the Bagels in the fridge. Unfortuanately, the "rise" part worked next to not at all. I have never seen or heard of using ice water with yeast, but I can see it works for you in your video. Pretty much followed your video step by step!"
    What could have gone wrong?

    Skip the cornmeal, skip proofing in the fridge overnight. Once they're rolled and shaped you can go right to boiling them. The extra steps here do almost nothing. You're going to think they're too small and you need to let them rise before boiling them but they will expand quite a bit when you boil them. And 20 seconds per side is not enough in the water, try 50-60 seconds per side. Your bagels will be denser and chewier.

    Has anyone tried this? The ingredients in the description say instant or rapid rise yeast, but I’d think with a long rise (even in the fridge), you’d want regular bakers yeast.

    Sorry, but I think a 'true' handmade bagel should be be made from a rope that is wrapped around your hand and then rolled/pressed to make a seam. It gives it that overlapping 'knot' texture at one point, which gives it more variety of texture. When I was a kid I used to hang out at the local 'Bagel Barn' and watch them being made - we called the family that ran the place the 'bagel benders'. Simply punching a hole in the middle and stretching it out makes it more boringly uniform like a machine made bagel. But still, I would eat your bagel any day...
