Pot Roast | Basics with Babish

  • On this episode of Basics, I'm going to show you how to make two different kinds of pot roast: a classic Yankee roast that's as American as apple pie, plus a modern take on the classic French pot roast.
    Ingredients & Shopping List
    + For the Basic Pot Roast:
    9 carrots, peeled (5 chopped for mirepoix, 4 chopped into larger pieces for roast)
    1 small yellow onion, peeled and roughly chopped
    5 ribs celery, washed and chopped
    1 eye round beef roast
    Kosher salt
    Black pepper
    1 Tbsp tomato paste
    3 cloves garlic
    2 bay leaves
    2 sprigs of rosemary
    2 sprigs thyme
    2 cartons beef broth, divided
    Dry red wine
    4 russet potatoes, peeled and quartered
    Special equipment: dutch oven or braising pot
    + For the Fancy-Ass Pot Roast:
    1 rib celery, chopped
    2 sprigs parsley, plus an additional 1/2 cup chopped parsley
    2 cloves garlic
    2 sprigs thyme
    3 bay leaves
    1 small yellow onion, halved
    2 whole cloves
    1 leek, sliced (just the white part)
    1/2 tsp whole peppercorns
    Kosher salt
    Black pepper
    4 boneless short ribs
    2 marrow bones, about 4-5 inches in length
    Water or beef broth for braising
    6 cornichons, finely chopped
    1/4 cup finely minced chives
    2 Tbsp dijon mustard
    Dash of white wine vinegar
    1 lb red potatoes, halved
    4 carrots, peeled, quartered, and cut into 4-inch segments
    1 bunch asparagus, halved
    Flaky sea salt
    Special equipment: dutch oven or braising pot, mesh sieve

    "One inch pieces"
    Babby.... that might as well have been a whole foot long piece of carrot. And inch is about 2.5 centimeters, or perhaps the size of the area between the end of your thumb and your first thumb knuckle.

    don't use an Eye Round, this is by far the toughest cut of meat and even slow cooking it (I have tried this exact recipe several times) doesn't tenderize it enough to be good, spring for a slightly more expensive chuck roast, or literally any other cut of beef.

    My mom always does a sort of mix between the two recipes, with some distinct differences. It may be cause im from central texas, but we all love our sauce to be more of a gravy, as far as ive noticed, and we really, really love the roast to be absolutely falling apart and sorta dry. I really like that texture myself. Pot roast is just a great dish that really has no downside i think.

    Okay, made the "Fancy-Ass Pot Roast" for New Year's dinner, to four out of five rave reviews. The fifth wasn't feeling well, so his taste buds were off.
    First--yes, it's time consuming, but oh, my God, it's worth it! The meat was so tender, the broth was delicious, the vegetables with the sauce were phenomenal! Definitely will be making this again.

      OrdinaryCreox no! If you’re just worried about the alcohol, it would totally be burned off by the time the food is done. But if you just don’t want to purchase or be around alcohol, you can still definitely enjoy the roast! The flavor will be slightly different, but it won’t be bad. You would just replace it with more stock. You also may want to add a splash of soy sauce or Worcestershire sauce to build flavor, but it would be fine without.

    While you're cooking up all the veg near the end, do you need to put the short ribs back in the oven or will they stay warm enough to plate directly once the veg is done?

    I have a sandwich recipe involving leftover roast and gravy to submit for your approval: the boilermaker deluxe. Toast two pieces of white bread, in the meantime slice three pieces of the roast as thin as you can and let them dry on napkins, after the toast is done slather it with mayonnaise and top with mozzarella cheese and then two slices of roast, soak a third piece of bread in the gravy and top the first layer and afterwards lay the final slice of roast and atop that goes two slices of American cheese and the other piece of toast. Microwave for 40 seconds and serve on a paper plate with a glass of milk cut crossways

    Hey I know, its late but I tried this recipe, but the eye round I got wasnt as fatty as yours, and ibdint have a Dutch oven, so I improvised and used my insta pot instead, same ingredients but just different execution, I know itll turn out alright though, thanks man.
