    The first cook-a-long stream I watched! That fried rice looked so yummy. Might have try that myself next week! I've never had fried rice with ham before (bacon, yes, and pork, yes, but not regular ham). Looks like a good way to use up leftover Thanksgiving ham.

    Really enjoyed listening you answer questions and reply to people's comments. :) And it was cool getting to listen to Sawyer, too. You two play off each other well.

    It's only "a problem" if you shove the chopsticks into the rice vertically. In some cultures, that means that it's an offering for your ancestors or the dead in general. That being said, do whatever you want. Other people's superstitions shouldn't control your behavior.

    since people are sharing their dishes, here's my "authentic" fried rice:
    - add meat product (spam/ham/bacon/sausage) to a hot pan with a few tbsp of oil and sear. if you're using seafood, dump it on a plate as soon as it's cooked, b/c it can get tough.
    - add a bit more oil and pinches of garlic and chopped scallion, along with any chopped fresh veg you're including. cook for a minute or two.
    - add beaten egg, and use a spatula to mix and "chop" the egg in the pan when you see clumps
    - use a moistened hand to crumble day-old or cooled rice directly into the pan (helps take out clumps)
    - toss rice to make sure the grains are coated in a little grease and getting fried
    - season with salt, pepper, and a little soy sauce or tamari (reduced/no-gluten soy)
    - keep tossing! you don't want gluey clumps
    - serve and enjoy.
    this replicates most of the chinese-style fried rice i grew up eating

    When making the rice for fried rice, pre cook a shit load. If you fuck up one batch of fried rice you can always try again and if at one point it works out, it gon go *quick*

    Hey Babish. I'm not sure if you take any requests or not. But, if you do, I think I have an idea/recipe for you.
    In an episode of American Dad (I'm not sure if you've ever seen the show or not) called "A Star Is Reborn", Stan Smith is invited to an elderly celeb's house and they begin enjoying this meal of an aspic (pieces of pork and beef suspended in gelatin) with a gibson (a martini, but a pearl onion instead of an olive). Stan also mentions something about a plate of loose hot dogs (I'm not sure how that's made). They also shown cottage cheese in a half-cantaloupe bowl with a glass of chilled Worcestershire sauce (I'm not sure how the taste will come out).

    I used Coconut Aminos from Trader Joe's instead of Soy Sauce when I was doing the Whole30. It's not as potent, but I still think it tastes really similar :)
